Daily Activity MID (English Version)


This morning on September 26 we entered the kitchen carrying out Mid Practice. And today we are group 4 which is carrying out Mid Practice assisted by group 3. Our group gets Celebes Buffet menu. We did Doing at 8:00 a.m. until 11:00 p.m. Before doing this we got a little direction about today's menu from Pak Jaya then we were absent and prayed before doing so everything went smoothly and well.


Well today my friend and I have the responsibility to handle dessert namely Cucuru Bayao and Banana ijo.As for ingredients from Cucuru Bayao namely Egg yolks, rice flour, cake emulsifiers, granulated sugar, wheat flour and also yellow coloring. First, the egg yolk mixer, granulated sugar, cake emulsifier and also add the chopped walnuts, after expanding, enter the rice flour and wheat flour that has been roasted first, then stir it until it is well mixed.
After that, take a baking sheet with a thin oil, and also spread the cake mold with thin oil and then put it in a steaming pan in which there is a slurry cake mold that has been heated and steamy for two minutes. fill the cake mold with the mixture slowly, not to be full, steam for fifteen minutes, then slowly remove it from the mold, place it on a set insert. While for simple syrup, cook until the sugar dissolves, not to stir constantly slowly then enter bayao cucuru cake into simple syrup one by one in a small fire, then lift the cake back, put it in the insert again, flush it again with a simple syrup evenly and slowly, do it until it's all finished and finished.


Then for green bananas, the ingredients that must be prepared are bananas that have been steamed (banana king), soft flour, coconut milk, margarine, sugar, pandan essence, green food coloring, salt. How to make the mixture first mixed coconut milk, sugar, margarine cook until boiling using medium heat, then add salt, green food coloring, pandan essence then after that, gently enter the soft flour and stir until blended until the mixture is soft, smooth and elastic, after a nice mixture we begin to form by means of the paste then flattened take the banana and store it on top of the flaked dough then roll it neatly then steamed 10-15 minutes. For the first sauce we mix cococnut milk, sugar, salt, pandan leaf and rice flour then cook until boiling and thick. After everything was finished we cleared our work area and the group that prepared came in and we waited for it to finish then we made a general cleaning and after that we returned to our homes.
